Bacteria exist everywhere, some of which are harmful to humans. To prevent spread of diseases and contaminants, handling, preparation and production of food are strictly regulated.
In the geriatric care, food is served to very sensitive people with diseases or weak health and therefore it is very important that food and hygiene standards are high.
In the municipality of Kävlinge some shortcomings with food processing and handling were detected 2010 in some of the homes for geriatric care. The results show that the practical moments in food handling are mostly safe but the staff’s knowledge of food hygiene is a bit poor. All the employees had completed in-house training on food hygiene but it appears that the education needs to be updated so that it is not forgotten. Update occasions could be a start to improve the situation and make the staff be more aware of the bacterial risks that can occur in practice. (Less)
