- Abstract
- According to the Environmental Protection Agency (2016) food production has a big impact on the climate, and a big part of the food gets wasted as garbage. About 91% of the food that the stores waste is still eatable (Naturvårdsverket, 2014). The government has set a goal to reduce the food waste with 20% until 2020 in comparison to 2010. In present days there’s a lot of research on how to maintain the durability on the groceries for as long as possible (Enarsson, 2015), but very little research on how we could reuse the food waste.
The aim of this case study is to show what kind of methods supermarkets can use to minimize the food waste and what they can improve to reduce the waste even further. The aim of this case study is to show what kind of methods supermarkets can use to minimize the food waste and what they can improve to reduce the waste even further. The methods that were used for this study was a literature analysis and a case study of the grocery store ICA Tuna together with interviews and observations.
The study shows that ICA Tuna has two primary projects to distribute the
food out to the customers instead of wasting it. One of their own projects is called Resurskocken, which cooks the food to be sold as lunch boxes. The other project is a cooperation with the organisation Food2Change, which distribute wasted food from the supermarket to their members.
Even though ICA Tuna does a lot to minimize the food waste there’s still
room for improvement. One opportunity is to lower the price on groceries which soon expires due to the best before- date, educate the store personal, cooperate with more organisations and keep better statistics. (Less) - Popular Abstract
