Abstract
In Sweden there are several political goals stating the importance of
diminished quantities of waste from the food sector, yet several thousand
tons of potentially edible food are being discarded of every year. This study
has examined the hindrances and opportunities of six different
organizations/initiatives working to lower the rates of food waste from
retail stores. It has also looked into potential measures from society to
facilitate the undertakings of these initiatives.
The study was performed through qualitative interviews with the six
different initiatives. Although their methods of reducing food waste
differed, most of them had in common that they depended on donations of
food from several different retail stores.

The interviewees all expressed difficulties in working with reducing food
waste from the stores. Hindrances involved the unpredictability of the
received goods which made it hard to plan for effective measures to use it
the best way. Some other difficulties were caused by the regulations
regarding the handling of food in Sweden. Retailer’s willingness to donate
was lowered by the fear that they could be held responsible if the donated
food had negative health effects. Another aspect was complications in
transporting donated food from stores to storage rooms because of the
requirements of an unbroken temperature chain.
Positive attitudes from most stakeholders and increased sense of
commitment from staff were the most important opportunities faced by the
initiatives according to the interviewees.
Desired help from the society was mainly focused on improved possibilities
to get funding, equipment and facilities.
This study has thus highlighted some of the hindrances faced by food waste
reducing initiatives, and provided background for a future analysis of
potential measures to support these initiatives and the benefits they
