Abstract
The production of animalistic food has prooven to be environmentally harmful in several ways, and since it is hard to solve the problem through measures directed towards the production, it may be relevant as a political scientist to investigate; how we might use political instruments to lower the consumption of meat, assuming we want the instruments to be cost-effective and legitimate.
I've studied three different kinds of instruments: taxes, information and regulation of the food served in public schools. Cost-effectiveness has been investegated through older studies, made on instruments directed at goods and behaviour comparable to meat and the consumption of meat. Legitimacy has primarilly been investigated through focus groups.

In the case of legitimacy the result shows support for information, while the results for the other two instruments is mixed. Participants emphasized freedom of choice, solidarity, scientific certainty and equal oppurtunities. The cost-effectiveness turned out to be different depending on how one designs the instruments. Information is likely to give little effects in the short run, but demands little resources spent. Regulation of public schools is likely to have effects, assuming a certain amount of support among the students. In the case of taxes, most studies show high cost-effectiveness. (Less)
