- Abstract
- This master thesis, executed in collaboration with Opticept Technologies, has the purpose of developing a machine concept that enables the treatment of leafy products with Pulsed Electric Fields (PEF). PEF is an emerging technology within the food industry that works by changing the cell membrane structure of food products by exposing them to high-voltage electric fields. It can be used to improve the shelf-life, freshness, taste, and nutritional value of various food products. Opticept currently has PEF-machines for liquid foods but is looking to expand the applicability of the technology to leafy products.

The project resulted in a new concept that fulfills several of the set requirements and has potential for further development. The concept is demonstrated with a small-scale prototype that visualizes the compression and transportation of leafy products, which were found to be critical aspects of the new machine. - The world population is increasing and the demand for sustainable food production is higher than ever. The development of new technology that enables more energy efficient processes, retention of nutritients and reduction of food waste is a key aspect in facing these challenges. One of the emerging technologies in this space is PEF, or Pulsed Electric Fields.
