Research question: What rational and cultural barriers prevent Swedish consumers from consuming seaweed, from a CCT perspective?
Purpose: The purpose of this thesis is to investigate, from a CCT perspective, the attitudes and perceptions consumers have towards the consumption of seaweed. It aims to explain barriers and marketplace-sentiments that hinder consumption based on symbolism, identity, and affect.
Theoretical perspectives: The theoretical framework of the study consists of previous research on the implementation of novel food items and Consumer Culture Theory. This framework is central to the analysis and understanding of the conclusions drawn regarding the barriers that affect consumption.
Methodology: To address the study's purpose, a qualitative study was conducted, incorporating taste tests, in-depth focus group interviews, and individual surveys to support the empirical material. The sample consisted of students from Lund University.
Result: The empirical material identified five rational barriers: accessibility, price, nutrition, taste & texture, and previous experience. Furthermore, collective identity, the accompanying marketplace-sentiment, and its feeling rules constituted cultural barriers that significantly influenced the degree of acceptance and affected the thresholds of the aforementioned barriers.
Conclusions: The impact of collective identity on the acceptance of novel foods and the way symbolic expressions can shift between communities opens up for new research opportunities within CCT. Additionally, the findings contribute to practitioners' ability to more effectively target the marketing of novel foods, where informal leaders can influence public opinion and create a desirable marketplace sentiment. Syfte: Syftet med denna uppsats är att, med utgångspunkt i CCT, undersöka vilka attityder och perceptioner som konsumenter har inför konsumtion av sjögräs, samt utifrån symbolik, identitet och affekt förklara barriärer och marketplace-sentiment som hindrar konsumtionen.
Teoretiska perspektiv: Studiens teoretiska referensram utgörs av tidigare forskning om implementering av novisa födoämnen samt Consumer Culture Theory. Referensramen är central för analys och förståelse för de slutsatser som dras kring vilka barriärer som påverkar konsumtionen.
Metod: För att besvara studiens syfte har en kvalitativ undersökning genomförts där både smakprov och djupintervjuer genom fokusgrupper används för att underbygga det empiriska materialet. Urvalet bestod av studenter från Lunds universitet.
Resultat: Det empiriska materialet identifierade fem rationella barriärer; tillgänglighet, pris, näring, smak & textur, samt tidigare erfarenhet. Den kollektiva identiteten, medföljande marketplace-sentiment och dess feeling rules utgjorde dessutom kulturella barriärer som i högsta grad påverkade grad av acceptans samt påverkade trösklarna till ovannämnda barriärer.
Slutsats: Den kollektiva identitetens påverkan till acceptans av novisa födoämnen och hur symboliska uttryck kan skifta mellan communities öppnar upp nya forskningsmöjligheter inom CCT. Dessutom bidrar slutsatserna till att praktiker kan rikta marknadsföring av novisa födoämnen på ett mer effektivt sätt, där informella ledare kan driva en opinion och skapa ett önskvärt marketplace-sentiment.
