Is there a connection between innovations in freezing technology and consumer acceptance of frozen food

Abstract
Freezing is a method used to preserve food for long periods of time by reducing the rate of naturally occurring reactions and growth of microorganisms. However, some irreversible quality changes, both physical and chemical, can take place during the freezing step. After being frozen, the products are stored until thawed and consumed. This thesis studies innovative freezing technologies to understand how they can help with maintaining high quality during freezing. Furthermore, the effect of storage and thawing technologies is described, since these steps have great impact on maintaining quality after the product has been frozen.

Freezing is a method used to preserve food for long periods of time by reducing the rate of naturally occurring reactions and growth of microorganisms. However, some irreversible quality changes, both physical and chemical, can take place during the freezing step. After being frozen, the products are stored until thawed and consumed. This thesis studies innovative freezing technologies to understand how they can help with maintaining high quality during freezing. Furthermore, the effect of storage and thawing technologies is described, since these steps have great impact on maintaining quality after the product has been frozen.
The importance of consumer acceptance on new technologies is high, since without acceptance products cannot be sold. Very little is known about consumer attitudes towards innovative freezing technologies, and because of that, a review and discussion of factors contributing to acceptance was done, in order to better understand what features are essential in gaining consumer acceptance. In addition to the factors normally discussed, such as risk, benefits and knowledge, the entanglement of a technology being a solution to a need and having some kind of human touch was found to be especially important to get acceptance of new technologies. People are, then, always looking for increased convenience and quality, which is something that frozen food offer and can therefore have an effect on people’s opinions. (Less)
