Flexitarian and vegetarian diets are of growing interest in France. While the nutritional profiles of individuals with high intakes of plant products are well characterized, exposure to pesticide residues and chemical contaminants are less documented. Moreover, higher consumption of organic products has been associated with higher consumption of plant products. Organic agriculture differs from its conventional counterpart since it bans the use of synthetic pesticides and considerably limits the use of inputs.
