Exploring the role of artificial intelligence in sustainable food processing in India

Abstract

Background: The Indian food industry is undergoing a significant shift towards sustainability, driven by emerging technologies such as artificial intelligence (AI). This study aims to explore the role of AI in promoting sustainable food processing in India, based on data collected from 110 businesses. Methods: Three hypotheses were developed and analyzed to assess the adoption of AI for sustainability in food processing. Statistical methods were employed to examine the correlations between AI applications and key sustainability indicators. Conclusions: The study underscores the need for industry stakeholders to address financial constraints, workforce skill gaps, and implementation challenges in order to fully leverage AI's potential. It contributes to the growing body of literature on sustainable food systems by providing empirical evidence and practical insights for policymakers and practitioners aiming to advance sustainability through AI adoption in food processing.
