Membrane processes in fruit juice production
(2024) p.25-56- Abstract
- Fruit juices are a key global beverage with an increasing market and membrane processes are key processes in fruit juice processing. The most established membrane processes are the pressure-driven processes: microfiltration and ultrafiltration for the clarification the juices plus nanofiltration and reverse osmosis the concentration/pre-concentration of the juices. Additionally, the potential of the emerging membrane processes, forward osmosis, membrane distillation and osmotic distillation plus electrodialysis and pervaporation in the industry will be highlighted. Furthermore, process integration of membrane processes in process synergies and hybrid processes will be discussed. Overall, this chapter will demonstrate that membrane... (More)
