Characterization of commercial mayonnaise products.

Abstract
Mayonnaise is a semi solid oil in water emulsion constructed from oil droplets of varying size, stabilized by egg yolk. The commercial mayonnaise products have different textures, viscosities and contain different oil droplet sizes. The purpose of this thesis was to characterize commercial mayonnaise products, by focusing on these parameters (texture, viscosity and droplet size). Techniques for using Texture Analyzer, Rheometer, Laser diffraction and Optical microscopy were developed for measuring these properties. The result present parameter ranges indicating consumer and mayonnaise mixer demands, but also
differences in mayonnaise texture, together with found correlations between investigated properties and ingredients.
