Matsvinnet ökar globalt, även i Sverige. Åtgärder för att förhindra detta diskuteras både hos FN och i den svenska regeringen och mål har därför satts upp för att minska detta. Nu finns det dessutom företag som går in med affärsidén att minska på matsvinnet genom att ta tillvara på råvaror som på grund av exempelvis fel storlek eller missformning sorterats bort och därmed egentligen skulle blivit matsvinn. Ett av dessa företag är Rescued som bland annat gör juice av bortsorterade frukter och grönsaker. Efter idén om att starta en ny sorts produktion valdes rotfruktschips gjorda på polka-, gul-, och rödbetor. Nu finns det dessutom företag som går in med affärsidén att minska på matsvinnet genom att ta tillvara på råvaror som på grund av exempelvis fel storlek eller missformning sorterats bort och därmed egentligen skulle blivit matsvinn. Ett av dessa företag är Rescued som bland annat gör juice av bortsorterade frukter och grönsaker. Efter idén om att starta en ny sorts produktion valdes rotfruktschips gjorda på polka-, gul-, och rödbetor. För att våga satsa på sin idé krävs att kontrollera ifall chips gjorda på bortsorterade betor kan mäta sig med kvalitetsgodkända betor och ge en likvärdig produkt med bra kvalitet och smak. För att ta reda på ifall en skillnad fanns i smak gjordes först olika försök för att hitta vilken temperatur och tid som gjorde ett gott och krispigt chips. På gulbeta visade 145°C i sex minuter sig vara bäst medan polkabeta och rödbeta visade sig vara bäst vid 150°C i fem-sex minuter. Därefter fick ett sensoriskt test med triangeltest som metod genomföras och detta visade att det inte fanns någon signifikant skillnad på dessa två kategorier. För att kunna kolla på lönsamheten i att starta en chipsproduktion behövdes en kartläggning på allt som behövdes för detta samt att införskaffa priser på vad det skulle kosta. Genom beräkningskalkylen blev totalkostnaden för en sådan produktion 282 kronor per kg. Med ett kilopris på 300 kronor blev slutsatsen därför att produktionen inte har en ekonomisk lönsamhet då det är så minimal vinst, i alla fall inte med dessa maskinerna. Däremot finns det absolut en lönsamhet ifall maskinkostnaderna kan minskas. (Less)

Actions to prevent this are being discussed both by UN but also in the Swedish government and goals for the future has because of that been set. Many new companies have started their business with the idea to take care of the food waste by using the raw material that because of the size or shape has been sorted out. These raw materials would have become food waste otherwise. One of these companies is Rescued and they are making juice made of fruits and vegetables that has been sorted out. Many new companies have started their business with the idea to take care of the food waste by using the raw material that because of the size or shape has been sorted out. These raw materials would have become food waste otherwise. One of these companies is Rescued and they are making juice made of fruits and vegetables that has been sorted out. A new idea came up about starting a new kind of production. Chips made of three different kinds of beetroots, yellow-beet, red-beet and chioggia-beet were decided. To be able to produce a good product it required to control if chips made of beets that has been sorted out could be just as good quality as class one beets and if it was possible for it to be an equivalent product with good quality and taste. To find out in case there was any differences regarding to the taste different tests was made. These were made to find out which temperature and time that made a tasty and crunchy chip. The yellow-beet required 145°C for six minutes while the red-beet and chioggia-beet required 150°C for five-six minutes. A sensory test was made with the method triangle test and it showed that there was no significant difference between these two categories. Too be able to look at the profitability in starting a production of chips it was required to collect information and look at the prizes for this kind of production. The calculation showed that a production like this would cost 282 Swedish crowns per kilogram. With a selling price of 300 Swedish crowns per kilogram the conclusion of this was that there is not an economically profitability in making this product because of the minimal profit, at least not with this type of machines. However, if it is possible to find machines for a cheaper prize there could absolutely be economic profitability. (Less)
