Teaching food engineering with the aid of multimedia

Lopez-Leiva, Miguel LU (2002) 8th International Conference on Engineering and Food (ICEF-8) p.1023-1033
Abstract
The explosive popularization of personal computers during the last decade, along with the appearance of the World Wide Web and of high-level programming techniques, has opened many new and exciting opportunities in the field of education. In this chapter, a review of existing types of multimedia material used in education and of some of the authoring tools used in the production of this material is given, along with comments on their features and limitations. A survey of higher education institutions working in food science and technology shows rather weak interest in this teaching technique. There is strong criticism against the high cost of development associated with such material. Through the study of some published work and our own... (More)

There is strong criticism against the high cost of development associated with such material. Through the study of some published work and our own experience, an attempt is made to explain this situation and suggest ways for improvement. (Less)
